
Old Fashioned Split Pea (or Lentil) Soup
I just love split peas and lentils. For one, they are super high in soluble fiber, and can help lower cholesterol. They can help protect against diabetes and cancer too! Personally, I love both split peas and lentils. While there’s not much taste difference, I find lentils tend to stay intact a bit longer, and resist turning to mush like split peas can, which is why I personally tend to favor them over split peas; however, they are both delicious and make this an awesome classic soup. It provides an excellent source of B vitamins, iron, magnesium, potassium, and zinc…and let’s face it, we are all looking for ways to boost that immune system, am I right?
