Light Rye Sourdough Bread

Ingredients
  

  • 1/4 c Rye sourdough starter *see sourdough starter recipe for instructions
  • 1 1/2 c Warm water
  • 1 tbsp Honey
  • 1 c Rye flour
  • 2 1/2 c Bread flour or all-purpose flour
  • 1 tsp Salt
  • 2-3 tbsp Caraway seeds

Instructions
 

Prepare dough night before bake:

  • Mix with dough hook: sourdough starter, honey, water, and rye flour.
  • Add one cup of flour, then second cup.
  • Add up to 1 more cup of flour. Dough should be somewhat sticky but well blended.
  • Add caraway seed and blend well.
  • Form into a ball, cover, and let rise in a bowl at room temperature for approx 8 hours.
  • Punch dough down and pull corners of dough to center, moving around the entire ball of dough 3-4 times. Shape into a ball and place on parchment paper (if using Dutch oven) or greased bread pan(s).
  • Slice (score) the top of your bread.

For baking in Dutch oven:

  • Place lid on Dutch oven and place in oven, heat to 450 degrees, then remove from oven.
  • Place dough (on parchment paper) into Dutch oven, and place lid on top.
  • Bake for 15 minutes, then remove lid and bake for another 15 minutes or until golden brown.

For baking in bread pans:

  • Bake at 400 degrees for approximately 30 minutes or until golden brown.
