  • 12 oz Cauliflower rice
  • 1 tbsp Cider Vinegar
  • 1 tsp Monkfruit sweetener or other sugar substitute
  • 1 tsp Onion powder
  • 1/4 tsp Celery seed
  • 1/4 tsp Garlic powder
  • 1/2 tsp Paprika
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 3 Eggs hard cooked and chopped
  • 1/4 c Stuffed green olives
  • 1/2 c Celery chopped
  • 3 tbsp Dill Pickle Relish


  • Steam frozen cauliflower rice in microwave or InstaPot. (If InstaPot, coat bottom of pot with olive oil spray.)
  • Cool cauliflower in a medium bowl.
  • Sprinkle with vinegar and sugar substitute.
  • Add onion powder, celery seed, garlic powder, paprika, salt, and pepper.
  • Fold in mayonnaise, eggs, olives, celery, and relish.
  • Cover and refrigerate for at least an hour.
