Keto Mock Potato Salad (made with cauliflower)
Potato salad without the carbs!

- 12 oz Cauliflower rice
- 1 tbsp Cider Vinegar
- 1 tsp Monkfruit sweetener or other sugar substitute
- 1 tsp Onion powder
- 1/4 tsp Celery seed
- 1/4 tsp Garlic powder
- 1/2 tsp Paprika
- 1 tsp Salt
- 1/4 tsp Pepper
- 3 Eggs hard cooked and chopped
- 1/4 c Stuffed green olives
- 1/2 c Celery chopped
- 3 tbsp Dill Pickle Relish
Steam frozen cauliflower rice in microwave or InstaPot. (If InstaPot, coat bottom of pot with olive oil spray.)
Cool cauliflower in a medium bowl.
Sprinkle with vinegar and sugar substitute.
Add onion powder, celery seed, garlic powder, paprika, salt, and pepper.
Fold in mayonnaise, eggs, olives, celery, and relish.
Cover and refrigerate for at least an hour.
