Hearty Beef Vegetable Soup
Delicious feel-good food that's good for you too!
- 2 c Beef roast, cooked and chopped I make mine in crock pot in advance
- 3 diced carrots
- 3 diced potatoes
- 1/2 Rutabaga, diced
- 1/2 Head of cabbage, shredded
- 1 Large onion, diced
- 5 c Beef bullion
- 1 can 15 oz Stewed Tomatoes
- 32 oz Tomato Juice
- 2 c Water
- salt and pepper to taste
Bring boullion, tomato juice, stewed tomatoes, and water to boil.
Reduce heat and simmer.
Add all other ingredients and simmer until tender.
It may be thicker than you like, so add a little more of your choice of liquids used. Makes a large quantity and tastes better if it sits a day before serving.
