Grandma's Cinnamon Rolls with Cream Cheese Frosting

Equipment

  • 1 Pastry Whisk or blender
  • 2 Large bowls
  • 1 9x13 baking pan

Ingredients
  

  • 2 c warm water
  • 1 pkg dry yeast
  • 1/4 c sugar (or honey)
  • 1 tbsp butter
  • 5-6 c flour
  • 1 tsp salt
  • 5 tbsp butter
  • 1-2 c brown sugar
  • 2-3 tbsp cinnamon

Cream Cheese Frosting

  • 1 pkg 8 oz cream cheese
  • 1/2 c butter
  • 1 lb powdered sugar
  • 1 tsp vanilla

Instructions
 

  • Dissolve yeast in 1/2 c of water.
  • Sprinkle a pinch of sugar on mixture and let mixture get foamy (approx 5-10 min).
  • Mix 5 c of flour with salt in separate bowl, then add to mix, along with tbsp of softened butter and 1/4 c sugar (or honey), and warm water.
  • Knead for approx 10 min by had or 5 min if using Kitchen Aid with dough hook.
  • Form dough into ball and place in a large greased bowl. Cover bowl with plastic wrap.
  • Let rise (proof) until dough is double in size (usually after 1-1.5 hour). This is best in a warm, moist area (see notes).
  • Punch dough down and split in half.
  • Roll one 1/2 out on floured surface, making a long rectangular shape (or oval).
  • Spread soft butter over the entire surface of your rolled dough.
  • Sprinkle brown sugar and cinnamon over the entire buttered surface of your dough (the more brown sugar, the gooier the rolls will be).
  • Let other 1/2 rise a second time, punch down, and shape into loaf to make bread, or repeat the same process for creating rolls for a second pan.
  • Roll the dough into a long "log" and cut log into 2" slices. Place sliced dough into a greased baking pan.
  • Bake at 350 degrees for 30-40 minutes, until tops are golden.
  • Make frosting while cooling.
  • Mix cream cheese, powdered sugar, butter, and vanilla and spread over slightly warm rolls.
