Equipment

  • 1 mixing bowl
  • 1 large bowl
  • 2 bread pans
  • 1 Pastry blender, dough whisk, or Kitchen Aid with dough hook
  • 1 plastic wrap

Ingredients

  • 2 c warm water
  • 1 pkg dry yeast
  • 1/4 c sugar or honey
  • 1 TBS butter
  • 5-6 c flour
  • 1 tsp salt

Instructions

  • Dissolve yeast in 1/2 c of water
  • Sprinkle a pinch of sugar on mixture and let mixture get foamy (approx 5-10 min).
  • Mix 5 c of flour with salt in a separate bowl, then add to mixture and mix, along with tbsp of softened butter, sugar (or honey) and warm water.
  • Knead for approx 10 minutes by had or 5 min if using Kitchen Aid with dough hook.
  • Form dough into ball and place in a large greased bowl. Cover top of bowl with plastic wrap.
  • Let rise (proof) until dough is double in size (usually 1 hour-1.5 hour). This is best in a warm, moist area. See notes.
  • Punch dough down and let rise again until double in size.
  • Shape into 2 loaves or rolls. Place in greased bread pans. Let rise.
  • Bake at 350 degrees for 30-40 minutes.
  • Remove from oven and let cool. Slice and enjoy!

Notes

To create a great proofing oven for rising:
Boil approx. 4 cups of water and place in a pan; place pan in bottom floor of oven.  Then place your bowl of dough on a rack and shut the oven door.  This locks in warmth and moisture, which is great for proofing bread!
