"Our ancient ancestors stumbled upon this mystical process, perfected it over centuries of trial and error, and delivered this amazing gift that we can readily share - it's the wonder of a simple loaf of bread!"
1 Pastry blender, dough whisk, or Kitchen Aid with dough hook
1 plastic wrap
1 pkgdry yeast
Dissolve yeast in 1/2 c of water
Sprinkle a pinch of sugar on mixture and let mixture get foamy (approx 5-10 min).
Mix 5 c of flour with salt in a separate bowl, then add to mixture and mix, along with tbsp of softened butter, sugar (or honey) and warm water.
Knead for approx 10 minutes by had or 5 min if using Kitchen Aid with dough hook.
Form dough into ball and place in a large greased bowl. Cover top of bowl with plastic wrap.
Let rise (proof) until dough is double in size (usually 1 hour-1.5 hour). This is best in a warm, moist area. See notes.
Punch dough down and let rise again until double in size.
Shape into 2 loaves or rolls. Place in greased bread pans. Let rise.
Bake at 350 degrees for 30-40 minutes.
Remove from oven and let cool. Slice and enjoy!
To create a great proofing oven for rising:Boil approx. 4 cups of water and place in a pan; place pan in bottom floor of oven. Then place your bowl of dough on a rack and shut the oven door. This locks in warmth and moisture, which is great for proofing bread!
