Chicken Fajitas (works with any meat)

  • 4 T canola oil divided
  • 2 T lemon juice
  • 1 1/2 t seasoning salt
  • 1 1/2 t oregano
  • 1 1/2 t cumin
  • 1 t garlic powder
  • 1/2 t chili powder
  • 1/2 t paprika
  • 1/2 t red pepper flakes
  • 1 1/2 pound chickn breasts/cut in strips or steak, pork, shrimp
  • 1/2 medium red pepper
  • 1/2 medium green pepper
  • 4 green onions
  • 1/2 c chopped onions
  • 6 flour tortillas


  • In a large bowl, add oil, lemon juice, and seasonings.
  • Add meat of your choice, cut in strips, and refrigerate 1-4 hours.
  • Coat a skillet with vegetable oil, and add sliced peppers and onions, sauteeing over medium heat until tender.
  • Remove vegetables and set aside.
  • Remove excess marinade from meat, and sautee in same skillet for 5-6 minutes. Return peppers and onions to pan and toss together.
  • Remove from heat and serve in tortillas, with toppings of your choice.


Suggested additional toppings: 
Cheese, sour cream, black beans, salsa, jalapenos.
